The county of Starr, located south of the Texas state, was established and organized in 1848 and was named after James Harper Starr, Texas’ Secretary of the Treasury. This county has been economically dependent on its farming, ranching, vegetable packing, oil processing, and tourism industries; beef, fed cattle, vegetables, cotton, and sorghum were its principal agricultural products. It also features numerous historical and recreational sites such as the Falcon State Park, Lower Rio Grande Valley National Wildlife Refuge, Lee House, and the grotto at Rio Grande City. This county is also home to Vaquero Days every February and Roma Fest which is held every November. Furthermore, barbecues, tamales, and other Tex-Mex food specialties are dominant in this area.
