    Joe and Aaron are army buddies and co-founders of 12 Fox Beer Co. After being stationed in Germany where they got to develop a taste for authentic German beers, both went their separate ways. Having reconnected years later, they decide to establish their own small batch, high-quality European master-crafted beer. They keep things simple – just like the Germans – by using single-sourced malt. And what’s German beer without a biergarten? With their wives' help, they opened one in the Fall of 2018, and now operate a tap room called The Fox Hole in Dripping Springs. Aaron’s wife Melissa creates delicious baked goods from spent grains for the guests. Both couples are busy transforming a Hill County backroad into a German biergarten and giving the community a unique experience. 12 Fox is family- and pet-friendly with a large covered patio, outdoor biergarten, kids’ play area, and small dog park. It also serves other drinks like wine, cider, and mead.

    The Acopon Brewing Company was established by the same group who gave Dripping Springs The Barber Shop. Established to provide a focus on English-style ales, the team opened another taproom just a stone’s throw away from the Barber Shop's location. The name is taken from a “restorative or cordial medicine or application”. The taproom opened in September 2017. It provides a selection of craft beers – not just English ales. It even has wine, cider, and sodas for non-fans of craft beers. The brewery follows an “old world model where each town in Germany or England would have their own favorite local brewery”, and the beer could only be found and enjoyed there. They have board games for use by guests, and welcome dogs into the taproom. They don’t serve food, so guests are also welcome to bring food in.

    The AquaBrew is a brewery, beer garden, restaurant, and events center located in downtown San Marcos. Opened in March 2016, it’s a spot where “craft beer, culinary delights, local music, and community come together” and aims to stimulate all the senses. Its events center can accommodate up to 500 people, and its rooftop bar and patio has bench-style seating that gives a casual and friendly vibe – perfect for taking in the Texas air. They have about 10 varieties on tap, and also usually feature a couple of guest breweries as well. Growlers and crowlers are available so you can take home a favorite brew. The place is open daily with both lunch and dinner menus. On weekend nights, they feature live music.

It was founded in the summer of 2011 by Kim and Dennis Middleton.They moved to Texas from California with the dream of opening a brewpub where people could enjoy a wide array of quality brews while enjoying all the “natural grandeur of the Hill Country.” Middleton Brewing strive to provide the community with world class beer in an inviting and laid back atmosphere. They brew an extensive collection of beers including “seven Belgian-style beers, five American-style beers, and two British brews.” In addition, they also offer a wide array of wine and locally made cider.

    Producing a range of locally sourced Belgian-style brews, Darkside Fermentation is located in the storage room of “The Root Cellar Cafe in San Marcos.” It started when Brewer and owner, Silas Parker approached The Root Cellar’s owner, Kyle Mylius in May 2009 to sell Darkside beer in the cafe. They offer Darkside’s flagship beer, “Mark of the Yeast: 78666” which is referred to by Parker as a “dark medieval ale.” This beer is nourishing and the finish lingers. Other beers in the Darkside lineup include the draught beers BrideAle and GroomsBeer, Weiz Guy, Golden Mean, and Pale Rider, a Belgian pale ale. Come in and try some these great beer that are brewed in-house. They also have a lot of seasonal flavors to choose from.

    Roughhouse Brewing is a family-run brewery that creates oak-fermented, American farmhouse beer on their ranch in San Marcos, Texas. Their American farmhouse beer complements the Texas backdrop which is dry, crisp and refreshing. They started Roughhouse Brewing in January 2019 with a drive to do meaningful work that brought the owners closer to their land and the community. The brewery and taproom are housed in a wooden barn with a welcoming, homey aesthetic, offering a range of beer as well as guest wine and cider. Their yeast-centric ales undergo 100-percent fermentation in American White Oak feeders using their house, mixed culture, which includes yeast harvested from the Pasternak Ranch. The expansive outdoor seating area at Roughhouse Brewing also includes a stage for live music every Saturday.

    Located in Dripping Springs and open since 2011, Twisted X Brewing Co. proudly specializes in beers to share with friends and family. Using “high-quality, local products”, their beers have a “Texas-influenced, Mexican-style” that will make you “rethink how you view beer”. The brewery started out “with the goal of educating people how different ingredients can make complex beers”. Today, they continue to use the 3BBL system they started the brewery with, which allows them constantly to experiment and develop new recipes. The brewery provides free tours for guests to learn about their brewing process. It's at 1pm and 5pm on Saturdays, and 1pm and 3pm on Sundays. Drop by the brewery often.
