Edgewise Eight Brewing is “a startup brewery” that started operations in 2018. Founded by Barney Ellis and his two sons, Colt and Clif, the three family members were avid former homebrewers. Between them, they’ve been winning awards for their beers since 2016, including a first place finish at the 2016 Great American Beer Festival.
In their website bio, they proclaim that they are “hell bent” on producing the highest quality beers. With the many awards they’ve won, it seems they’re on track. The next step would be to open the brewery’s own taproom to add to their production facility. That just might come soon. In August 2019, the city of Weatherford offered the brewery a downtown space on Weatherford’s North Main Street. For now, get their award-winning beers at bars and pubs around Weatherford and Fort Worth.

Born in upstate NY, Owner Josh moved to Texas and started home brewing almost immediately. After over a decade, he partnered up with Ryan Stewart and opened, the Parker County Brewing Company. Ryan began brewing 10 years ago and after perfecting recipes on his 10gal system, he made the official jump to be the head brewer of the company. In addition to their handcrafted beers, Parker County Brewing Company also makes the finest Neapolitan pizza in the county! All pizza on the menu are handmade using only the finest imported ingredients.
