Briefly called Brooksville, Florence dates back from the early 1850s. the name changed when the post office opened in 1857. After the Civil War, wheat, cotton and cattle were the town's economic mainstays. By the 1890s the town was prospering with the stores, mills, hotels, and lodges typical of a central Texas town on the rise. Uncommon businesses then were a stone quarry and a cheese factory. The railway came about in 1912 and ended in 1935. Florence High School is the only high school in Texas that has a complete meat processing laboratory and full-service meat market.
