The brewery draws 60% of its water from a well located inside the property. Owner John Wilkerson, head brewer Stefan Zurakowski, and sales and marketing head Mark Nichols honors the importance of going local in other ways as well. They named one of their brews, a Mexican style lager, after Cinco de Mayo hero General Ignacio Zaragoza, who was born in Goliad.
