Austin’s Uncultured Ales is a “very low production brewery” specializing in aged sour beers. Founder Cass Everitt is a self-taught homebrewer who happens to like sour beers. He specializes in what he calls “laissez-faire fermentation”. The process can take several months or even years, which accounts for his low production capacity for now. The brewery also doesn’t have a taproom just yet, but has managed to produce eight varieties. These include Fugarillo, a light golden dry hopped sour, and C-A55, a sour red ale. The Acopon Brewing Company was established by the same group who gave Dripping Springs The Barber Shop. Established to provide a focus on English-style ales, the team opened another taproom just a stone’s throw away from the Barber Shop's location.
