D.E.W. Distillation, LLC

Distillery in Wimberley - 23.04 mi

D.E.W. Distillation is the creator of fine rums sold under the Cypress Creek Reserve brand. Owned by David Watson and wife Laura, it is a small-batch micro-distillery creating handcrafted rums in Wimberley. The decision to put up the distillery came after Daniel and his brother tasted some good rum while vacationing in Mauritius. At first, they thought of simply importing the rum into the U.S. A rig welder by profession, David eventually struck out on his own, and built the distillery from scratch. D.E.W. Distillation, LLC currently produces the Cypress Creek Reserve Crystal Rum and the Crystal Creek Reserve Vanilla Flavored Rum. They also sell their Vanilla Extract at the distillery. Created by “aging our Crystal Rum with Tahitian Vanilla Beans”, the rich extract is “ideal for flavoring, cakes, cookies, pastries, and ice cream”.

The tour they offer is "the most informative" if you "have been on several brewery/distillery tours" already. You also "get to sample their whiskey and 2 of their full-size beers". Also, "for a small surcharge, you can also try two of their award-winning whiskey". They have "great choices for beer and the bourbons and rye are great". This is "a must stop when you're in San Antonio!"

Rebecca Creek Whiskey

They even "host trivia and karaoke!" Their Rebecca Creek Whiskey has "barrels spices and woody aromas". It also has "a touch of vanilla and dried herbs" that are "fairly subdued". The "taste follows suit with a bit of pepper and more barrel spices". "The finish is fairly clean and slightly bitter".
