Open since 2017 and located “in the middle of nowhere”, Wild Bunch Brewery announces its presence once you see its handwritten sign. Brew master Jarle Lillemoen owns and operates Wild Bunch Brewing Company. He and Managing Member Jamie Caras both hold doctoral degrees in biochemistry, which should come in handy at the brewery. Calling his beer the “best damn beer in Texas”, Jarle only uses “high quality ingredients” in his “100% unfiltered beers”. He also uses the traditional method of brewing using an open propane flame throughout the process. He is also non-traditional in the age of state-of-the-art brewing equipment. Yet, his method yields “richer, more intense flavors and colors”. A blogger writes that Wild Bunch as of October 2019 offers seven beers served in jam jars at their taproom. Not bad for a brewery that’s designed and hand-built by Jarle himself. Finally, prior to establishing Wild Bunch, Jarle was the master distiller at Bone Spirits Distillery in Smithville.

Hi Sign Brewing takes its name from Hi Sign Road in Lincoln, Montana. The name stuck because Marine Corps veteran Mark Phillippe, the brewery’s founder, spent time with his Dad in a little cabin off Hi Sign Road. It was there that he developed his love for craft beers. After his military stint, Mark found himself searching for his next path. Two mentors, both also in the beverage industry, convinced him to pursue his dream of building his own brewery. The brewery opened in 2017 with Andrew Shelton as head brewer. Andrew brings an extensive brewing background including stints at Texas and Florida breweries. Located in a 6,600 square feet warehouse and situated in a one-acre lot, the airy taproom has ample space for special events. While at the brewery, try the blond ale with “the perfect subtle amount of blueberry” Violet the Blueberry Blonde (5.1% ABV). It’s their bestseller.
